Why results differ

A cup measures volume, not weight, so the answer depends on the ingredient and how it is measured. A cup of flour can weigh 110–150 g depending on whether it is scooped, spooned or sifted. We assume spoon-and-level — the method most modern recipes use — so treat every cup conversion as a close estimate, not an exact truth.
